Tonight I made dinner rolls. This is the recipe I used and how I did it.
4 1/2 cups all-purpose flour
2 1/4 tsp active dry yeast
1 cup milk
1/3 cup sugar
1/3 cup butter
1 tsp salt
2 eggs
I used my Kitchenaid. Place all the flour and yeast together in the mixing bowl and whisk it together. Meanwhile, in a small saucepan heat and stir milk, sugar, butter, and salt just until warm and butter almost melts (120 - 130 F). Add it to the flour mixture along with the eggs.
Using the dough hook, mix together on speed 2 for a few minutes or until dough comes together. Scrape sides of bowl if necessary. Knead on speed 2 about 2 minutes more or until dough is moderately stiff and smooth and elastic.
Shape into a ball. Place in a greased bowl and turn to grease surface. Cover; let rise in a warm place until double in size (about 1 hour).
Punch dough down. Divide in half on a lightly floured surface. Cover and let rest for 10 minutes. Lightly grease baking sheets (or use parchment paper or reusable nonstick liners).
Shape dough into 24 balls or desired rolls. I went half and half. Since this is my first time making rolls, I chose to do 1/2 traditional rolls and 1/2 "butterhorn rolls". For the butterhorn rolls, roll the dough half into a 12-inch circle, cut into 12 wedges (think pizza slices) and beginning at the wide end, loosely roll toward the point. Place point side down 2 - 3 inches apart. I had some odd shaped ones, so I made a few extra (I ended up with 14 instead of 12.)
These are for tomorrow night, so they are chilling in the fridge until then. Hopefully they are delicious!
